Creamy Mushroom Pasta | Vegan


I love a good bowl of pasta and this creamy mushroom pasta is a new favourite! it’s so comforting, creamy and delicious. Everything you need in a delicious weekday or weekend meal.

You could also add vegan chicken pieces or vegan bacon to this and it would be so yummy. I also love topping mine with chilli flakes for some extra spice!


Serves 1

You will need:

- 100g pasta of choice, I used spaghetti
- 1 tbsp vegan butter 
- handful of mushrooms, sliced
- 2 cloves of garlic, diced
- 1/2 onion, diced
- 125ml soya cream 
- 3 tsp Italian herbs
- Salt and pepper, to taste


1. Boil your pasta and add some salt for flavour.
2. In a pan on medium heat, add the vegan butter. Once melted, add the sliced mushrooms and allow to cool for 2-3 minutes before adding the garlic and onion. Cook for around 4 minutes until the onions are translucent.
3. Pour in the soya cream, add the dried Italian herbs, and salt and pepper to taste.
4. Reduce the heat to a simmer until the pasta is cooked.
5. Add a splash of pasta water to the sauce before adding the cooked pasta.
6. Serve and enjoy!
