Double Chocolate Banana Bread | Vegan

If you love chocolate cake and like bananas, then you will love this recipe. It’s honestly so yummy.

This double chocolate banana bread is a slightly different take on my pb&j banana loaf and banana biscoff loaf, they're all equally as delicious, but this one is a tad more indulgent and full of chocolatey goodness.

You will need:

- 3 ripe bananas
- 1/2 cup coconut oil
- 1 tsp vanilla extract
- 1/3 cup caster sugar
- 1 cup self-raising flour
- 1/4 cup cacao powder
- 1 tsp bicarbonate soda
- 1 bar vegan chocolate

1. Preheat the oven to 180C and line a loaf tin with parchment paper.
2. In a large mixing bowl, mash the bananas.
3. Place the coconut oil in a mug in the microwave for 35 seconds until melted.
4. Pour the melted coconut oil into the mixing bowl along with the vanilla extract.
5. Add the self-raising flour, caster sugar, cacao powder and bicarbonate soda. Mix until well combined.
6. Chop the chocolate into small chunks and fold them into the mixture.
7. Pour the mixture into the loaf tin and place in the oven for 40 - 45 minutes. Poke a skewer through the middle of the loaf and if it comes out clean then it is done, if not, place it back in the oven for a few more minutes.
8. Remove from the oven and allow to cool completely before slicing and enjoying!
