Creamy Tomato Pasta | Vegan


This has got to be my all-time favourite budget-friendly, quick and easy meal. It’s so simple but sooo good! This is such a good meal for when you really can’t be bothered to cook and want something fast.

I'm sure you've seen the viral vodka pasta on your Tiktok or Instagram at some point, but this is my simple, alcohol-free take on it!


serves: 1

You will need:

- 100g uncooked pasta
- 1 tbsp olive oil
- Handful of cherry tomatoes
- 1 tsp garlic (2 cloves)
- 2 tsp Italian mixed herbs
- 1 tsp chilli flakes, optional
- 2 1/2 tbsp tomato puree
- 125ml soya cream


1. Bring your pasta to a boil with a little bit of salt.
2. Chop the cherry tomatoes in half.
3. In a large pan, add the olive oil on medium heat. Once hot, add the cherry tomatoes.
4. After a couple of minutes, squish the cherry tomatoes and add the garlic, Italian herbs and chilli flakes.
5. Add the tomato purée and mix everything around until coated.
6. Pour in the soya cream and mix again.
7. Reduce the heat to low until your pasta is ready.
8. Once the pasta is cooked, remove some of the pasta water (around 1/4 cup / 5 tbsp) and add it to the pan with the sauce. Mix until silky smooth.
9. Add the pasta to the sauce and mix until well-coated.
10. Serve and enjoy!
