White Chocolate Pumpkin Cookies | Vegan


These vegan gooey cookies are filled with pumpkin and melted white chocolate chips 🤤 they’re so easy to make and only take 15 minutes to whip up!


You will need:

- 1/4 cup vegan butter
- 3/4 cup light brown sugar
- 1/2 cup caster sugar
- 1/3 cup pumpkin purée
- 1 tsp vanilla extract
- 1 1/2 cups plain flour
- 1/2 tsp baking powder
- 1/2 tsp bicarbonate soda
- 200g white chocolate chips

Method -

1. Preheat the oven to 180C and line two baking trays with parchment paper.
2. In a large mixing bowl, combine the vegan butter with the pumpkin purée, vanilla extract, light brown sugar and caster sugar. Mix until smooth.
3. Add the plain flour, baking powder and bicarbonate soda. Mix until a smooth cookie dough has formed.
4. Fold the white chocolate chips into the cookie dough.
5. Divide the cookie dough into 8 and roll into balls.
6. Place in the oven for 12 - 15 minutes.
7. Once you remove them from the oven they will be very soft, but they will harden as you allow them to cool. Sprinkle some more white chocolate chips on top before they have cooled, so they melt a little bit on top!
